Banana Bread
Ingredients
4 eggs
2/3 cup evaporated milk with 1 tablespoon of white vinegar or 2/3 cup of buttermilk
1 cup light olive oil
2 cups mashed bananas
1 cup white sugar
¾ cup brown sugar
3 ½ cups all-purpose flour
2 teaspoons baking soda
½ teaspoon cream of tartar
1 teaspoon cinnamon
½ teaspoon ground ginger
1/2 teaspoon salt
1 teaspoon vanilla
Directions
Pre-heat oven to 350 degrees F. Spray two 9×5 inch loaf pans with non-stick spray and put aside.
With a hand mixer on medium speed mix the eggs, buttermilk, oil and bananas. Add the dry ingredients to the wet ingredients. Mix until well combined. Pour evenly into the sprayed loaf pans and bake for about 55 minutes or until a toothpick inserted in the center comes out clean.
