Black Bean Veggie Burger
Ingredients
1 (16 ounce) can black beans, drained and rinsed and pulsed in your food processor until it resembles a paste but still has some small pieces in it
1 red bell pepper, chopped into small pieces in your food processor
1 small red onion , chopped into small pieces in your food processor
¾ cup corn kernels , frozen or canned – if frozen make sure to thaw first
2 medium sized carrots, shredded in your food processor
1 – 2 cups croutons, pulsed in your food processor into fine crumbs
1 egg
½ teaspoon curry powder
1 teaspoon onion powder
½ teaspoon red pepper flakes
Salt and pepper to taste
Directions
In a medium bowl mix all ingredients until the mixture hold together. It will be sticky. Divide evenly and shape into 4 patties. The patties can either be made in the frying pan or baked in the oven. If cooking on the stovetop use a medium size pan and sauté the patties over medium heat until slightly crispy outside and warm on the inside. If baking lightly oil a baking sheet and preheat your oven to 375 degrees F. Bake about 10 minutes on each side. If desired add cheese on top and let melt. Serve on a burger bun with your favorite condiments.
