Blueberry Syrup
Total Time: 20 minutes Yield: 4 servings
Ingredients
1 cup blueberries
1/2 cup water
¼ cup – ½ cup brown sugar (depending on the sweetness of your berries a little less or more)
1 tablespoon cornstarch mixed with 2 tablespoons cold water
1 tablespoon bourbon (if you prefer feel free to use vanilla extract)
1 teaspoon lemon juice
Directions
In a small bowl mix the Cornstarch with the water and put aside. Combine the remaining ingredients in a saucepan and cook on medium until the blueberries start to soften and burst. Continuously stir to avoid burning. Once the berries have softened stir in corn starch/water. Simmer until the syrup mixture starts thickening. You will need to c the mixture for about 10 minutes until the it reaches a syrupy consistency. The mixture will thicken a bit more as it cools
