Broiled Lobster Tails

Ingredients

4 lobster tails

1/2 cup butter, melted

salt and pepper to taste

½ teaspoon onion powder

1 tablespoon fresh chives

1 lemon

Directions

Melt butter in a small saucepan. Add salt, pepper, onion powder, chives and lemon juice. Lemon juice should be added to taste. Some like more juice and others prefer less. Reserve 2 teaspoons of the melted butter with seasoning. Pour the remaining butter into a small bowl. Set aside.

Rinse and dry the Lobster Tails. With sharp scissors cut the top part of the shell all the way down to the bottom where the tail base is. Try not to cut the meat. Once the top part of the shell has been cut turn the Lobster Tail over and carefully loosen the meat from the bottom part of the shell with your fingers. Be careful, the shells I worked with were very sharp. Gently pull the shell open a bit so the loosened meat can be placed into it. Preheat broiler to high. Place the Lobster Tails in an oven safe dish and drizzle ½ teaspoon of melted butter on each Lobster Tail. Broil the Lobster Tails until the internal temperature reaches 145 degrees (F). The 4 ounce Lobster Tails I had took 8 minutes.  Serve with the melted Butter for dipping and Lemon wedges on the side.
