Crouton Crusted Chicken Breast
Ingredients
4 skinless and boneless chicken breasts cut in half lengthwise
salt, pepper and onion powder to taste
2 eggs – beaten
1 1/2 cups all-purpose flour
3 -4 cups seasoned croutons – one of my favorites is garlic
vegetable oil for frying
Directions
Put the croutons in a food processor and pulse until the croutons are fine bread crumbs. Put aside. Cut the chicken breast in half lengthwise so you have 2 cutlets per chicken breast. Season with salt, pepper and onion powder. Dredge the chicken in the flour and shake off the excess. Dip into the beaten egg then then press firmly in the crouton crumbs. Make sure that the crumbs stick to both sides of the chicken. Gently shake off excess. Heat the oil in a frying pan and fry the crouton coated chicken on medium heat until the chicken is golden brown and firm ( depending on thickness about 4 – 5 minutes per side). Place on a paper towel to drain. Enjoy !
The croutons gave the chicken really nice flavor. We liked this recipe a lot. I will make this again for sure.
