Delicious Bacon wrapped Pork Tenderloin Medallions
Ingredients
1 package pork tenderloin (the packages I buy usually have 2 pork tenderloins)
½ package bacon
Salt and pepper to taste
Directions
If needed trim the pork tenderloins. After the tenderloin has been trimmed slice into 2 ½ – 3 inch thick medallions. Season the medallions with salt and pepper to taste. Wrap a slice of bacon around each medallion and secure with a toothpick so the bacon stays in place. Add a tablespoon of olive oil to a frying pan on medium high heat. When the oil is hot add the bacon wrapped medallions and cook them on the bacon sides until the bacon turns crisp. Once the bacon is crisp brown the top and bottom of the medallion. The internal temperature should be around 145 to 150 degrees. Let the meat rest for about 5 minutes then serve. If the internal temperature is too low after you have finished cooking the medallions ( which is what happened to me) just put the medallions in the oven at 350 degrees until the desired internal temperature has been reached.
