Easy Homemade Pasta

Ingredients

2 cups Flour

3 large eggs

1/4 teaspoon salt

Directions

In a small bowl combine the flour and salt. In a separate bowl mix the eggs with a fork until scrambled. Put the flour on your counter (or a large clean surface) and make a well in the center. Add the scrambled eggs. Using a fork and starting on the inside of the well, carefully mix the eggs into the flour. Adding a little flour at a time. Once the flour and eggs have been incorporate knead the dough, by hand, for about 10 minutes on your counter. Wrap the pasta dough in plastic and let it rest for 30 minutes. After the dough has rested roll it through your pasta machine. Start with the thickest setting. Then adjust the setting to roll the dough thinner every time you roll your dough through the machine. Repeat the process until the dough has reached the desired thickness. Cut pasta into about 12 inch length sheets. Fold the sheets in half and cut strips with a knife or pizza cutter. The strips can be as thick or thin as you would like them to be. Try to cut the strips as evenly as possible but keep in mind this is homemade pasta. They don’t need to be perfect. Once your pasta is done bring 5 quarts of salted water to a boil. When the water is boiling carefully drop the pasta into it. Stir and cook over medium heat for 3-4 minutes or until the pasta is done. Drain the pasta. Serve with the sauce or seasoning of your choice.
