Finger Licking Smoked Chicken
Ingredients
Rub
1 teaspoon salt
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon dried thyme
1/2 teaspoon marjoram
1/2 teaspoon dried sage
1 teaspoon brown sugar
1 whole Chicken – I used a 8 pound Oven Roaster Stuffer
Directions
Mix all the dry ingredients. Season the Chicken (inside and out) with the dry rub. Make sure the chicken is covered well with the seasoning. Wrap the seasoned Chicken in plastic wrap and let it rest in the refrigerator for a few hours or even overnight. Spray your smoker rack with non- stick cooking spray and put the Chicken on it. Turn your electric smoker to 225 degrees. Once your smoker has reached the desired temperature add the rack with the Chicken. You can use any kind of Fruit Wood Chips for this ( Apple, Peach, Cherry). I have used all of the wood chips I just mentioned as well as Pecan and Beech. We love the smoky but not too strong flavor of both Pecan and Beech. In our Masterbuild Smoker we have to use a liquid when smoking to prevent the meat from drying out. Depending on your own taste you can use Water, Apple Juice, or any other liquid. We found that a can of Beer does the trick for us. Smoke the Chicken until the desired temperature has been reached then remove the Chicken from you smoker and let rest of 10 – 15 minutes. Then carve and enjoy
The whole 8 pound chicken I smoked took a little over 6 hours @ 225 degrees. I cooked the chicken to 160.
