French Onion Soup Stuffed Mushrooms
Ingredients
1 pound whole white mushrooms, cleaned and stems removed
1 tablespoon butter or margarine
2 yellow onions, diced
1 tsp sugar
salt and pepper to taste
½ teaspoon fresh rosemary
¼ cup beef broth
1 cup gruyère cheese
Instructions
Clean the mushrooms and remove the stems. Put aside. Sauté the diced onions in the butter or margarine until tender. Add the sugar, salt and pepper and continue cooking until lightly browned. Add the beef broth and cook until the onions are tender and most of the liquid has evaporated. Pre-heat the oven to 350 degrees. Arrange the mushrooms on a parchment paper lined cookie sheet and stuff with the onion mixture. Top liberally with cheese and bake for 30 minutes. Sprinkle with fresh parsley or chives if desired. Allow to rest for a few minutes before serving. The mushrooms will be very hot.
