Hand Blender Mayonnaise

Immersion Blender Mayo

Ingredients

1 large egg ( pasteurized)

1 ¼ cup vegetable oil

1 teaspoon fresh lemon juice

salt and pepper to taste

 

Directions

Starting with the egg add all the ingredients to your jar. Place the Immersion Blender into the jar, making sure it rests snugly on the bottom. Turn the Immersion Blender on high (making sure the Blender continues to rest snugly on the bottom of the jar) and watch as the oil turns into mayo. This should only take about 30 seconds. Do not move the Blender until just about all the oil has changed into the creamy consistency of mayo. When only a little oil remains, slowly remove the Immersion Blender from the jar. As you remove the Blender move it lightly back and forth. All of the oil should be emulsified at that point. Once the Immersion Blender has been removed season the mayonnaise with salt and pepper to taste.

  1. I was out of Mayo so I thought I’d try this for my Turkey Sandwich today. I had all 4 ingredients on hand. I did add some mustard and that worked well. It is true. This only took a few minutes. Not many dishes dirtied and it tasted good. I will make this again.
