Heavenly Cinnamon Rolls
Ingredients
1 cup warm milk
2 1/2 teaspoons instant yeast
4 – 5 cups flour
1/2 cup melted butter
1/2 cup honey
1 egg
½ teaspoon salt
¼ cup melted butter
1 cup brown sugar
4 teaspoons cinnamon
Frosting
1 package (8 ounces) softened cream cheese
1/2 cup butter, softened
1 ½ cups powdered sugar
1 teaspoon vanilla extract
A pinch of salt
Directions
Pour the milk, honey and yeast into the bowl of your kitchenaid mixer. Let sit for 10 minutes. Allow the yeast to become foamy. Turn your mixer to low speed and add the flour, one cup at a time, the melted butter, egg and the salt. Mix on medium speed for about 10 minutes. Your dough should be soft and a little sticky when touched. Move the dough to a greased bowl and let rise until doubled in size. Once doubled in size roll out the dough into a rectangle about 20×15 inches big. In a small bowl mix the brown sugar with the cinnamon. Spread the melted butter evenly on the dough and sprinkle with the cinnamon sugar. Roll up the dough. Putting seam side down cut into rolls. Place the rolls into a greased 9×13 baking pan. I used 2 aluminum pans for easy clean up. Cover and put the pans into the fridge.
The next morning remove the rolls from the fridge. Let stand at room temperature for about 30 minutes then preheat your oven to 400 degrees F. While the oven is preheating mix the frosting ingredients together. Bake the rolls for 15 to 20 minutes or until golden brown. Once the rolls finished baking remove from the oven and spread the frosting on the warm rolls.
