Instant Pot Egg Bites

Ingredients
5 large eggs
1/2 cup cottage cheese
1/4 cup cream cheese
1/2 cup cooked ham, diced
3/4 cup shredded cheddar
salt and pepper to taster
1/2 cup red bell pepper, diced
Directions
Pour 1 ½ cups of water into your Instant Pot. Place the trivet in it. Add the eggs, cottage cheese, cream cheese and salt to a blender. Mix until smooth and fluffy. Stir in salt and shredded cheese until well blended. Spray the cups of the silicone mold with non stick cooking spray. Divide the diced peppers evenly into each cup then pour the egg mixture into each cup of the mold. Place the mold on top of the trivet in your instant pot and cover with the plastic cover that it came with. Lock the Instant Pot lid and set to pressure cook for 7 minutes. After the pressure naturally released lift the mold out of the pressure cooker. Let sit for 2 minutes. Use a fork to gently lift out each egg cup out of the mold. Serve or freeze.
