Light and Fluffy Pancakes
Ingredients
1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
½ teaspoon kosher salt
1 ½ tablespoons white sugar
1 1/4 cups evaporated milk
1 egg
Directions
Add the flour, baking powder, salt and sugar to a large bowl. Use a whisk to combine the dry ingredients. In a separate bowl add the egg and evaporated milk. Mix until well combined. Add the milk mixture to the flour mixture and whisk until quite smooth. Don’t over mix. It’s okay if the batter has a few lumps.
Heat your non stick griddle to medium heat. If you don’t have a griddle a skillet can be used. Scoop 1/4 cup of batter on the griddle using a measuring cup or ladle. Repeat for each pancake. Flip the pancakes when bubbles show on the surface and the bottom side is browned. It takes about 3 to 4 minutes. Cook until the second side is browned as well. Serve with your favorite syrup.
This is hands-down the best pancake recipe I have ever tried, and I have tried my fair share. I added some maple flavoring, maybe two teaspoons. I also added just a bit of pure vanilla extract. I usually double the recipe and freeze the leftovers.
