Migas – Mexican Breakfast (my way?)

 Ingredients

¼ cup vegetable or canola oil – set 1 tablespoon aside

8 small corn tortillas (cut into strips)

1 red bell pepper, diced

1 red onion, diced

8 eggs

Red pepper flakes (to taste)

Salt and pepper to taste

¼ cup diced cheddar

Directions

Heat the oil in a large frying pan over medium-high heat. Add the tortillas strips and cook until golden brown and crispy. It can take anywhere from 5-10 minutes. Make sure you keep an eye on the strips so they don’t burn. When the strips are crispy remove them from the frying pan. I let them sit on a plate with a couple of paper towels so the oil can drain a bit after I remove them from the pan. Season with salt ( to taste).

At this point I usually wipe the frying pan with paper towels to remove the grease and any crumbs that might have come off the tortillas. Heat the remaining tablespoon of oil in the cleaned pan with the diced bell pepper and onion. Cook for about 5 minutes until both the onion and the red pepper starting to soften a bit. Whisk the eggs in bowl and season with pepper, salt and red pepper flakes. Add the tortilla strips to the pan with the cooked onion and pepper. Mix a little then add the eggs and the cheddar cheese to the pan as well. Cook on medium heat until  the eggs are cooked and the cheese is melted. This will only take a couple of minutes. Serve and enjoy !

  2. Yum! Never heard of these before, but came across them for a brunch menu! VERY easy to make .
