“Neiman Marcus” Chocolate Chip Cookies
Ingredients
2½ cups old fashioned oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, room temperature
1 cup light brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla
12 ounces semisweet chocolate chips
Directions
Preheat oven to 375 degrees and line cookie sheets with silicone baking sheets or parchment paper.
Blend the oats in a food processor until they are a fine powder. In a medium bowl, whisk together the blended oats with the flour, baking powder, baking soda and salt and set aside. In another bowl use an electric mixer to cream together the butter and both sugars until light and fluffy. Beat in the eggs – one at a time. Gradually add the flour mixture, beating just until incorporated. Fold in the chocolate chips.
Use an ice cream scoop to form the dough into balls and place about 2 inches apart on the baking sheets. Bake one sheet at a time for about 10 minutes or until the edges are set but the center still looks a little under cooked. Before removing the cookies from the cookie sheets let them cool completely
