Pickled Onions
PICKLED ONIONS
Ingredients
1 large red onions, sliced thinly
¾ cup apple cider vinegar
3 tablespoons fresh lemon juice
3 tablespoons rice wine vinegar
1 ½ tablespoons light brown sugar
1 ½ teaspoons coarse kosher salt
red pepper flakes –to taste, optional
1 teaspoon mustard seeds, optional
Directions
Add the sliced onions to a mason jar that has a lid. In a medium saucepan bring the remaining ingredients to a simmer. Simmer for a minute or two until the sugar and salt have dissolved. At this time you should carefully taste the mixture to make sure it is to your liking. Feel free to add more sugar or salt as you see fit. Carefully pour the mixture into the jar. Allow to stand at room temperature until cooled. Cover and refrigerate.
