Potato Skins
Ingredients
6 potatoes
8 ounces of a cheese that melts nicely (such as chedder, gouda, montery jack or american). I used havarti because it needed to be used it. It melted wonderfully and tasted great.
5 strips of cooked bacon – chopped
salt and onion powder to taste
butter favored cooking spray
sour cream
green onions or chives
Directions
Wash and then dry the potatoes. Pierce each potato with a fork a few times and then microwave until tender. Depending on the size of the potatoes it can take anywhere from 15 – 25 minutes. If you prefer and if you have the time you can use the oven to bake the potatoes at 400 degrees for about an hour instead of microwaving them. When the potatoes are tender let them cool off a little. It will make handling them much easier. When the potatoes are cooled off a little and you are ready to proceed with the recipe preheat your oven to 425 degrees. While your oven is preheating cut the potatoes in half and scoop out the inside – leaving about ¼ inch around the edges. Spray the inside of the potatoes with butter flavored cooking spray and then season with a little salt and onion powder. Put on a cookie sheet or a big enough baking pan and bake in the oven for approximately 20 minutes or until the potatoes are starting to brown and crisp up a little. Take the shells out of the oven and fill with cheese. Add the chopped bacon pieces on top. Bake for another 10 minutes or until the cheese melted. If you prefer you can also broil for a couple of minutes.
Serve with a dab of sour cream and green onions or chives. Enjoy !
