Raspberry Dream Cake
Ingredients
1 package white cake mix – prepared as directed on the package
½ can sweetened condensed milk
2 packages (3oz / each) raspberry Jell-O
1/2 cups boiling water
1 cup cold water
16 ounces whipping cream
3 tablespoons powdered sugar
Directions
Prepare the white cake mix according to package directions and bake in a 13×9 inch pan. While the cake is baking add one of the Jell-O packages to the boiling water and mix until the Jell-O is dissolved. Stir the cold water and the evaporated milk to the mixture. Mix until well combined. Remove the cake from the oven when done. While the cake is still hot poke holes all over the cake with a fork. Pour the Jell-O / condensed milk mixture slowly all over the cake. Let the mixture soak into the cake and then let the cake cool completely. Refrigerate the cake for a few hours so the Jell-O can soak into it.
Topping
Sprinkle the remaining package of Jell-O on top of the heavy whipping cream and mix with a bit. Let stand for a few minutes to soften the Jello-O. Add the powdered sugar and on medium speed mix the heavy whipping cream with the Jell-O until the mixture becomes a mousse like consistency. Frost the cake with the topping. If desired decorate with raspberries and/or chocolate shavings. Keep cake refrigerated.
