Smoked (Baked) Potatoes
Ingredients
1 baking potato per person
½ teaspoon or so of olive oil per potato
Kosher salt – enough to sprinkle on all sides of each potato
Directions
Preheat your electric smoker to 250 degrees. Make sure the vent is 3/4 open. While the smoker is preheating wash and dry the potatoes. Once the potatoes are dry poke them a few times with a fork. Then rub them with olive oil and sprinkle kosher salt all around. Place the potatoes on a rack in the smoker. Depending on their size smoke for about 3 – 4 hours or until tender. I like to use pecan wood chips for this recipe.
