Smoked Tuna Salad

Smoked Tuna Salad
Total Time: 3 hours Yield: approximately 4 -6 servings
Ingredients
2 Tuna Steaks, thawed if frozen
2 teaspoons avocado oil
salt and pepper to taste
1 small red onion, chopped
1 tablespoon chopped fresh parsley
¼ cup chopped celery
¼ – ½ cup mayonnaise (use as little or as much as you like)
½ teaspoon lemon juice
Directions
Preheat your smoker to 225°F. Blot the Tuna Steaks dry with a paper towel before seasoning. Once the Steaks have been blotted dry brush them with the avocado oil and season with pepper and salt. Spray your smoker rack with non -stick cooking spray and place the steaks on it. When your smoker reaches 225°F place a pan with one can of (cheap) beer in the smoker. If you prefer you can use water. I personally love using beer. I use Pecan Wood Chips but you can just as easily substitute and use Apple or Cherry instead. Smoke the Tuna Steaks until they reach an internal temperature of 140°F. This will take anywhere from 1-2 hours. The fish should easily flake when tested with a fork. Flake the Tuna Filets and let them cool off a bit. In a large bowl, combine the tuna, mayo, onion, celery, lemon juice and parsley. Mix well. Add salt and pepper to taste. Refrigerate until chilled.
