“So Good You can eat it with a Spoon” Mango Salsa
Ingredients
2 ripe mangoes – diced (small)
1/2 red onion diced ( small)
2 tablespoons fresh chives ( chopped)
1/2 teaspoon lime juice
Optional – jalapeno to taste or a few crushed red pepper flakes.
Directions
Dice the mangoes, onion and chives. I actually like to cut the chives with scissors. It makes the job pretty easy. Mix all ingredients. If the Mangoes are juicy and sweet nothing else is needed. If after mixing you decide that the mangoes weren’t sweet enough after all just add a touch of honey.
If you like a little spice feel free to add fresh jalapeno or a few crushed red pepper flakes. My husband is a wimp when it comes to spice so I decided to leave it out this time.
I made this because I had some extra Mango that needed to be used. I used a little honey to sweeten this a bit because my Mango weren’t sweet enough
