Sourdough Pancakes
Ingredients
OVERNIGHT SPONGE
2 cups flour
2 tablespoons sugar
2 cups buttermilk
1 cup sourdough starter
PANCAKE BATTER
all of the overnight sponge plus add the following ingredients:
2 large eggs
1/4 cup vegetable oil or melted butter
3/4 teaspoon salt
1 teaspoon baking soda
Directions
To make the overnight sponge add 1 cup of sourdough starter to the flour, sugar, and buttermilk. Mix and cover the mixture. Rest overnight.
The next morning mix the eggs with the melted butter. Add this mixture to the overnight sponge.
Then add the salt and baking soda, stirring to combine. The batter will become light and bubbly. Let the batter rest while you preheat your griddle. Brush your griddle with butter then add a ladle full of batter for each pancake. When the pancake is browned on the bottom and the edges are beginning to lift away use a spatula to turn over. Cook on the second side until brown and cooked through. Serve and Enjoy !
