Tasty Lemony Chicken
Ingredients
4 skinless and boneless chicken breasts cut in half ( horizontally)
Salt, pepper and onion powder to taste
2 cups all-purpose flour
1 ½ – 2 cups chicken broth
3 tablespoons cornstarch mixed with 6 tablespoons of cold water
1 lemon – juiced ( you need about ¼ cup of the freshly squeezed lemon juice)
Vegetable oil for sautéing
Directions
Cut the chicken breast horizontally in half. Season with salt, pepper and onion powder. Dredge the chicken in the flour and shake off the excess. Heat the oil in a frying pan and sauté the chicken on medium heat until it is golden brown on both sides. Put chicken aside while making the gravy. In the frying pan ( you can use the same one that you used for the chicken – just remove most of the oil) add the chicken broth and lemon juice. Feel free to add a little less or even more lemon juice depending on your preference. Bring the mixture slowly to a boil and simmer for a couple of minutes. Remove the frying pan from heat and stir in the cornstarch slurry. Make sure you stir the sauce while adding the cornstarch or your sauce will be lumpy. Put the frying pan back on low heat then add the chicken. Leave on low heat for about 15 minutes. Serve and Enjoy !
The Chicken was delicious. Juicy and tender. I couldn’t get enough of the sauce. It was really good. Next time I’ll make this with Rice so it can soak up the sauce.
