Tasty Smoked Steak and Eggs
Ingredients
2 – 3 cups diced steak
1 medium onion
4 eggs
2 tablespoons butter
salt and pepper to taste
Directions
Add 1 tablespoon of butter and onion to a large frying pan and sauté over medium heat until the onions are golden brown. Add the steak and season with salt and pepper. Cook until the steak is nicely browned. Remove the steak and onions and keep warm. Add the remaining butter to the same frying pan. Melt over medium low heat. Once the butter has melted crack the eggs ( one at a time) and add to the pan. Season the eggs with salt and pepper. Cover the frying pan with a lid and cook until the egg whites are set. If heat is too high, eggs will become tough and rubbery. Gentle heat allows the eggs to cook evenly.
