Turkey stuffed Acorn Squash
Ingredients
2 Acorn Squash
3 tablespoon of olive oil
salt and pepper to taste
1 pound ground turkey
1 medium onion – peeled and diced
½ teaspoon of poultry seasoning
2 – 3 tablespoon of panko bread crumbs
3 tablespoons of grated parmesan cheese
1 cup shredded cheddar cheese
Directions
Preheat oven to 400 degrees. Clean the outside of the acorn squash and cut in half horizontally. With a spoon scoop out the seeds. Brush the cut sides with olive oil and season with salt and pepper. Place the squash cut side down on a parchment paper lined cookie sheet and roast for about 30 minutes (or until the squash is tender). Remove from oven and put aside.
While the squash is baking add a tablespoon of olive oil in medium size skillet and sauté the turkey, onion and seasoning until the meat is no longer pink. Add the panko breadcrumbs, parmesan cheese and salt and pepper if needed. Stir until combined.
Fill squash cavities with the turkey mixture then bake for 10 minutes. Remove from oven, top with the shredded cheddar and bake until cheese melted.
